M4V files are a video container file format developed by Apple, that is very similar to MP4 files, and are the video equivalent to Apple’s version of MP3 files - which are named M4A. The main difference is that M4V files can have DRM copy protection enabled on the file, to restrict unlicensed reproduction of the video file.
MOV files were created by Apple, are associated with the application Quicktime and often times use the MPEG-4 codec for compression. They were built as a cross-platform format, meaning they can be played on many Mac and Windows applications. MOV files are one of the few container formats that support alpha channel, or transparency.
M4V files and MOV files are both container formats that both utilize the MPEG-4 compression format. MOV files can sometimes be handled more efficiently by video editing platforms, so if you are looking to edit M4V files, it could be useful to convert the file format to MOV.
NOTE: It's important to distinguish between file container formats and compression formats, or codecs. For example, MP4 is a container, and can hold different types of video compression, for example, MPEG-2 Part 2, MPEG-4 AVC, or HEVC, as well as audio (again compressed in a variety of formats) and metadata (for example subtitles). Some codecs can be wrapped in multiple different containers. Containers are sometimes referred to as file extensions, e.g. MOV, MP4, or AVI, but it's important to remember that there can be different types of video within these file formats.
